Rawon has a black sauce that is obtained from a special spice called kluwak or kluwak. In East Java , rawon contains beef. But you can create it with chicken, you know.

Ingredients :

- 1 chicken tail, wash thoroughly

Ground spices:

- 6 cloves of garlic 

- 10 red onions 

- 2 cm turmeric 

- 2 cm ginger 

- 7 kluwek fruit (take the contents, brew hot water)

- 3 candlenuts 

Other ingredients: 

- 2 lemongrass stalks, crushed

- 4 cm galangal, crushed 

- 6 lime leaves 

- 2 bay leaves 

- 2 spring onions, sliced

​​- 1 tablespoon sugar 

- 1 tablespoon brown sugar

- Salt to taste

Complements: 

- Short bean sprouts 

- Cayenne pepper

How to make:

1. Wash the chicken, give lime juice, let stand 10 minutes, wash again until clean, set aside. 

2. Saute ground spices until fragrant, add lemongrass, galangal, lime leaves and bay leaf, stir until the spices are cooked. 

3. Enter the chicken, add sugar, brown sugar, salt and water and stir until smooth.

4. When the chicken is tender, adjust the taste and serve with the toppings.
