Duck meat is tougher and larger in size so it needs to be cooked with special tricks. Like the kebumen fried duck which is cooked with complete spices before frying.
Ingredients :
• 1 tail (1.3 kg) duck
• 2 limes
• cooking oil
• 2 lemongrass stalks
• 2 bay leaves
• 3 lime leaves
• 2 cm galangal, bruised
• 1.5 liters of water
Ground spices:
• 7 cloves of garlic
• 4 red onions
• 2 hazelnuts
• 1 cm ginger
• 2 cm turmeric
• 1/2 tsp peppercorns
• 1 tsp sugar
• 2 tsp salt
Cayenne Pepper:
• 20 pieces of red chili
• 2 curly red chilies
• 5 cloves of garlic
• 1 tsp salt
Complementary:
• tomato
• cucumber
• basil
How to Make Fried Duck :
• Wash the duck and cut it into 4 parts. Coat the duck with lime juice and let it sit for a while.
• Saute ground spices until fragrant and cooked.
add bay leaves, lime leaves, lemongrass and galangal, stir until wilted.
• Add the duck pieces, stir until stiff and white in color.
• Pour in the water and bring the duck to a boil. Cover the pan, cook on low heat until the duck is really tender and the gravy is gone. Remove the duck and drain.
• Rawit Sambal: Puree all the chili ingredients.
• Heat 5 tablespoons of oil and fry the chili sauce until cooked and fragrant. Remove and cool.
• Heat plenty of oil in a frying pan until it's hot.
• Fry the duck until it is submerged in oil, until the duck is browned and dry. Lift and drain.
• Serve fried duck with Sambal Rawit and its complements.
Tips for making fried duck:
1. Choose a medium sized duck that is fat. Duck for fried duck can be purchased in the form of a carcass or alive and cut by the seller.
2. Make sure all the downy hair is clean and the duck's brutu has been cut and the excess fat on the buttocks has been cut off.
3. The process of frying the duck is only to dry the outside because the fried duck is already cooked. Therefore, use a lot of oil and heat so that the duck is dry evenly without turning it over.
